Plantain Paleo Pancakes


• 2-3 ripe (yellow) plantains
• 3 eggs
• ½ teaspoon soda bicarbonate or arrowroot
• ½ teaspoon cinnamon
• coconut oil
• Toppings: butter, berries or banana

In a blender mash the plantain, add the 3 eggs, cinnamon, soda bicarbonate, vanilla until is
completely mixed. The batter should be dense, and not liquid, but not too dense either.

Heat up a pan, add half tablespoon of coconut oil, and then when the oil is heated add 2 tablespoon of the batter into the pan and flatten it out as big as your palm. Cook until golden, a few minutes on each
side. Transfer to a plate and repeat with remaining batter, adding oil between each pancake.

You may need to have a go several times until you manage to get the pancake right. But once you get
how to prepare them, you will be delighted by the taste. Top it with butter and berries of your choice.
