Ham And White Bean Soup


• 3 cans white beans, drained and rinsed
• 450 g ham, chopped
• 1 white potato, chopped
• 1 onion, minced
• 2 carrots, chopped
• 4 garlic cloves, minced
• 1 can roasted tomatoes
• 1 tablespoon coconut oil
• 1 l vegetable stock
• ½ teaspoon dried basil
• 1 teaspoon oregano
• 1 bay leaf
• Salt, pepper, to taste

White bean soup


Preheat oil in a pan over medium heat. Add carrot, onion and potato and sauté for about 8-10 minutes. Add garlic and cook for 1 minute more.

Add ham, beans, tomatoes, stock, bay leaf, oregano, basil, salt and pepper. Bring everything to a boil and reduce the heat to low.

Cook covered for 30 minutes. Mash the soup with a potato masher and cook for 10 minutes more. Discard the bay leaf and serve.
