Avocado Artichoke Lentil Salad
Ingredients
• 130 g canned cooked green lentils
• 1 avocado, sliced
• 1 artichokes, quartered
• 2 garlic cloves, minced
• 1 tablespoon fresh mint, chopped
• 1 teaspoon Dijon mustard
• 2 tablespoons olive oil
• 2 tablespoons lemon juice
• Salt, pepper, to taste
Directions:
Mix garlic, Dijon mustard, mint, oil, lemon juice, salt and pepper in a bowl.
In a separate bowl, mix lentils, avocado and artichokes. Pour the dressing on top and toss well to combine.
Cover and refrigerate before serving.
