- 1 lime, zested and juiced
- 6-8 bunches spinach, leaves rinsed and dried
- 2 tablespoons olive oil
- ½ teaspoon sea salt
Preheat the oven to 150 degrees C. Prepare a baking sheet and line it with parchment paper.
Mix zest and salt in a bowl. Drizzle spinach with oil and coat well. Sprinkle with lime zest salt mixture and coat to combine.
Spread the leaves on the baking sheet in one layer and bake for 30-35 minutes. Let cool before serving.
