Banana Coconut Muffins


  • 3 ripe bananas
  • 3 eggs
  • 1/3 cup coconut flour
  • 1 tsp vanilla (optional)
  • ¼ tsp soda bicarbonate
  • ¼ tsp arrowroot
  • 3 tsp coconut oil
  • 2 tsp cinnamon
  • 1 slice of butter (1 cm)
  • 1 tblp maple syrup

Preheat oven to 200 C degree. In a blender mash the banana, add the eggs, the coconut flour, soda
bicarbonate, arrow root, until is completely mixed.

Melt the butter, coconut oil, add the maple syrup and cinnamon and mix it well, then add it to the prepared batter and mix everything well together. The batter should be dense, and not liquid, but not too dense either.

Add the batter to the form or cupcakes in the form and bake it until is ready (in about 30-40 minutes).
